Anyone Else Sick Of Snow?



Woke up to another snowfall this morning...those huge, wet kind of flakes. It snowed for a couple hours, then stopped. We got a few inches but most of it melted with the mist that followed the snow. BUT it is snowing, again!

I figured seeing it was so nasty out I would bake cookies and send them down to the nice guy that plows the driveway...need to keep him happy in this kind of weather, right?

I have tried several different recipes for cookies and found the Doubletree Chocolate Chip Cookie, with a few changes are the best for us. We do not like chewy when it comes to chocolate chip or oatmeal cookies...they have to be CRUNCHY!

Out of about 8 dozen this is what I kept for our enjoyment...


Doubletree Hotel Chocolate Chip Cookies

1 1/2 cups butter -- softened
1 1/2 cups. granulated sugar
3/4 C. firmly packed brown sugar
4 eggs
2 1/2 tsp. vanilla
1 tsp. lemon juice
3 C. all-purpose flour
3/4 C. oatmeal -- uncooked
3/4 tsp. baking soda
1 tsp. Salt
1/4 tsp. cinnamon
3 C. semi-sweet chocolate chips
1 1/2 C. chopped walnuts (I use pecans)

Preheat oven to 350 degrees.
Place the butter in a large bowl and cream lightly with an electric mixer. Add the sugars and beat on medium speed for about 2 minutes. Add the eggs, one at a time, beating well after each addition.

Add the vanilla and lemon juice and mix well. In a separate bowl, stir together the flour, oatmeal, baking soda, salt and cinnamon.

Add to the creamed butter mixture and stir well to blend. Add chocolate chips and walnuts and stir to combine.

I use a small scoop, it holds a tablespoon. Drop the batter onto the cookie sheet, leaving 2 inches between each cookie.

Bake for 15 minutes or until lightly browned around the edges. Remove immediately and cool on wire racks.

Yield: 7-8 dozen cookies

I have to admit, I'm a chewy chocolate chip fan but I wouldn't turn one of these down ;)

Oh yes, I have to copy this recipe. I love crunchy!!!

We had snow today. It never melts completely before the next snowfall comes. I am just used to it, so no complaints here!

I have never used a silpat. How do you like it?
No, I'm not sick of the snow. I just love the way it looks. But I will also be pleased when spring rolls around. I think it's very sweet that you made cookies for the snow removal guy!!

Yes...I am sick of snow. It is snowing right now and another wave of it is coming. I baked brownies yesterday and kept them all for myself.

Not sick of it yet and we are getting a few inches right now! I like chewy or crunchy! Yours look absolutely amazing! Now I have to have some!

I am prone to chewy, and thick..but I sure would love so of yours! I will sacrifice.
We aren't getting as much as they said, thank God...but more predicted for mid week!
